- 1 C pancake mix (Kodiak, Bob’s Red Mill or other)
- 1 scoop PODIUM Whey Coffee Ice Cream
- ¾ C water (or cold coffee)
- ½ banana smashed
- ½ tsp. vanilla extract
- ½ Tbs. honey
- ½ C nonfat greek yogurt
- Optional - cocoa powder for dusting
1. In a bowl, mix together the pancake mix, protein powder and water (or coffee for a stronger coffee flavor)
2. Scoop pancakes onto a hot griddle with a ⅓ C scoop (should make about 4 pancakes) and allow to cook until golden brown, flipping halfway through.
3. In a separate bowl, mash the banana and add vanilla extract, honey and greek yogurt and mix until well combined.
4. Layer pancakes with the yogurt mixture, dust with cocoa powder if desired and devour!
